This is probably the best black bean brownie recipe I have ever tried! Since it is the month of Valentine’s Day, and chocolate is associated with this holiday, I thought I would share this recipe. Enjoy a batch of moist, tasty brownies with your family with a clear conscience! They are healthier than traditional brownies (making a few healthy swaps), high fibre, and they are also gluten free! Blend the following in a blender or food processor:

• 1 can BPA free black beans, rinsed until no longer frothy
• 3 eggs (or 3 vegan “flax eggs”: 1 tbsp ground flaxmeal + 3 tbsp water = 1 egg)
• 2 tbsp Extra Virgin coconut oil
• 1/2 cup cocoa powder
• 3/4 cup coconut sugar, raw honey or sugar of choice

Spread in an 8 by 8 pan, sprinkle 1/2 cup Enjoy Life chips on top (optional). Bake at 350 F approx. 25 mins. ENJOY!!!!!
